Anchovies & White wine vinegar

Marinated anchovies are also known as white or fresh anchovies. At our delicacy manufacture plant we exclusively process our daily catch which guarantees premium quality of our hand filleted anchovies then put into a light marinade (only white wine vinegar,water and marine salt). The refined taste, the pure white colour and the firm consistency of the muscle flesh are quality determinig features Pelagos is proud of.

Anchovies & salt

We freshly salt our catch on a daily basis. Anchovies are cleaned by hand and seasoned with marine salt exclusively the same day our ships catch them. From the Adriatic sea – directly into the manufacture plant on spot at Zadar port ensures perfect condition of the anchovies. The superior taste is due to an optimal ratio of light salt content, pressure and controlled maturing temperature. A longer maturing period and a lower temperature ensure premium product quality. The maturing process is supervised for a period of 4-6 months. After maturing, anchovies are filleted by hand. 

Sardines & salt

Sardines are cleaned by hand and put into marine salt exclusively the same day our ships catch them. From the Adriatic sea – directly into the  manufacture plant on spot at Zadar port ensures perfect condition. For our delicacy manufacture we choose periods of the year when sardines have an optimal size and fat content. The maturing process lasts 5-8 months, a longer maturing period and a lower temperature ensure premium quality.

Year round

(except for monthly moonlit nights phases and close season), 20 days in a row, our fishing fleet leaves the Pelagos dock at Zadar port before sunset, to position and anchor in pelagic waters. The fishing vessels turn on their spotlights – from landsight they look like scattered shining islands on the dark horizont.

The spotlights

attract shools of small pelagic fish – sardines and anchovies. As is the tradition in Croatia, our gears are purse seine nets. Back home at our dock in the morning, where our processing plant is, our fleet brings the fresh fish in thermic containers with iced sea water, and it is processed the same day it is caught – a predisposition for premium quality.

Anchovies and sardines

either salted, marinated or fresh, besides their exceptional taste are a valuable source of omega-3 fatty acids (EPA-eicosapentaenoic and  DHAdocosahexaenoic, 2055mg/100g) important for brain activity and the cardiovascular system and vitamines A and D.

Anchovies and sardines

belong to the category of oily fish and unlike the white fish category, their fillets contain up to 30% oil. Taken from the wild, the pelagic sea, we keep it natural – only ingrediants according to ancient traditional recepies, no artificial additives. At Pelagos tradition and handcraft meet sophisticated facility conditions.

Our Fishing Fleet - Ready To Sail Off

20 days in a row, our fishing fleet leaves the Pelagos dock at Zadar port before sunset, to position and anchor in pelagic waters. The fishing vessels turn on their spotlights – from landsight they look like scattered shining islands on the dark horizont. The spotlights attract shools of small pelagic fish – sardines and anchovies. As is the tradition in Croatia, our gears are purse seine nets.

Tuna Catching Season

The Jabuka bit is a sea depression of up to 270m. Its name is derived from the small vulcanic island Jabuka in the Croatian Mid-Adriatic. Full of life, due to clean waters, strong currents and high salinity it is a perfect nursery and sprawning ground for a multitude of species – a habitat the tuna schools migrate to in catching season. The catch size is according to ICCAT regulations not less then 8 kg. Fishing operations are conducted under ICCAT supervision by international oservers, who use stereoscopic cameras to control and register the transfer of the live fish from the nets to the towing cages. The tunas are then slowly pulled by tugboats (max. speed 1-2 Nm) to the farm, where using the same methods of supervision, divers lead them to stationary cages. The farming cycle lasts a minimum of 18 months.

Atlantic Bluefin Tuna - Sustainable Biofarming

Tunas are fed daily. Fished during moonless nights with our own fishing fleets. 20 days in a row, the small pelagic bait is transferred fresh directly to the tuna farms, which is important to keep the high protein level of the bait and assure the premium quality of muscle flesh our customers are used to. During the the monthly moonligth phases and close season, we feed our tunas with IQF’d bait reserves from our cold storage (IQF d bait has the same protein level as fresh bait). Our divers monitor the condition of the fish daily, as health and condition are important to us. Sea temperature and sea water oxygen levels are meassured daily.
